Zwetschgenknödel are a classic German dessert made with a soft, potato-based dough encasing sweet, ripe plums. The plums are coated in sugar, giving them a luscious sweetness that complements the dough. Rolled in toasted breadcrumbs and topped with cinnamon sugar, these dumplings are the perfect way to celebrate plums in Germany. 500g potatoes (preferably starchy, such as Russets or Yukon Golds)
200g flour
1 egg
1 pinch of salt
1 tbsp sugar
1 tbsp butter (melted)
10-12 ripe plums (Zwetschgen)
2 tbsp sugar (for the plums)
1 tsp cinnamon (optional)
100g breadcrumbs (for frying)
30g butter (for frying)
Prepare the potatoes: Boil the potatoes in salted water until tender. Peel them and mash them well. Let them cool for a few minutes before using.
Make the dough: In a large bowl, combine the mashed potatoes, flour, egg, salt, and sugar. Mix until you have a smooth, firm dough.
Prepare the plums: Cut each plum in half and remove the pit. Add a little sugar inside each plum for extra sweetness.
Form the dumplings: Take a portion of dough, flatten it in your hand, and place one plum in the center. Carefully wrap the dough around the plum, sealing it completely to form a dumpling.
Cook the dumplings: Bring a large pot of salted water to a boil. Gently drop the dumplings into the water and cook for about 10-12 minutes, or until they float to the surface. Remove with a slotted spoon.
Fry the dumplings: In a pan, melt the butter and toast the breadcrumbs until golden brown. Add the cooked dumplings to the pan and toss gently to coat them in the breadcrumb mixture.
Serve: Sprinkle with cinnamon and sugar for an extra touch of sweetness before serving.
Storage: Leftover Zwetschgenknödel can be stored in the refrigerator for up to 2 days. Reheat them by steaming or frying for a crispy outer layer.
Gluten-Free: Replace the regular flour with a gluten-free flour blend to make the dumplings gluten-free.
