This Turkish Tomato Salad (Çoban Salatası) is a vibrant and refreshing dish, perfect for summer! Made with juicy tomatoes, crisp cucumbers, spicy peppers, and a zesty lemon-olive oil dressing, this salad is easy to prepare, full of flavor, and pairs beautifully with grilled meats, flatbread, or served as a light starter. Quick to make and naturally vegan and gluten-free, it’s a delicious Mediterranean classic that everyone will love!
500 g ripe tomatoes
250 g cucumber
1 small pepper or green bell pepper
1 red onion
½ bunch flat-leaf parsley
25 ml fresh lemon juice
25 ml olive oil
Salt to taste
Optional: 1 pinch of sugar, pepper
Peel the onion, halve it, and slice it very thinly. Sprinkle with a bit of salt and let sit for a few minutes. Then rinse and squeeze well.
Wash the tomatoes, remove the seeds, and cut into small cubes.
Peel the cucumber, halve it lengthwise, scoop out the seeds with a spoon, and also cut into small cubes.
Remove seeds from the pepper and finely dice.
Pluck the parsley leaves from the stems and roughly chop.
In a large bowl, combine the tomatoes, cucumber, pepper, onion, and parsley.
Add the lemon juice and olive oil, season with salt (and optional sugar and pepper), and mix well.
Let the salad sit for about 10 minutes before serving.
